Pancakes

1½ c all-purpose flour, sifted
3½ tsp baking powder
½ tsp salt
3 tbsp sugar
1 egg, well-beaten
3 tbsp oil or melted shortening
1 c milk


Mix flour with baking powder, salt and sugar in a bowl. In another bowl, combine egg, oil and milk. Add to flour and stir by hand just enough to moisten the dry ingredients. Do not beat.

Heat griddle so that drops of water bounce off it, or to 400°. Swipe some oil across griddle. Pour a ¼ cup of pancake batter on griddle for each pancake. Cook until tops begin to rise and bubbles dot surface; turn and brown on other side; ~ 3 minutes total.

Makes ~ 12 4" pancakes

Notes
Nicole’s Girl Scout troop made these during one camping trip, but couldn’t find the egg so left it out. The girls loved them and were heard to comment “I’m going to tell my parents to leave out the egg.” It’s not the missing egg. It's the recipe--and a camping appetite, of course!
