Brunch Eggs

3 potatoes
2 eggs
cheese (sliced or grated)
oil for skillet
garlic salt
leftovers from fridge J


Grate 3 potatoes in food processor. Coat skillet with oil, add potatoes; season with garlic salt. Add other ingredients (green pepper, onion, etc., if desired). Cover and cook over moderately low heat for about 10 minutes. Uncover and turn potatoes to cook other side for about 5 minutes.

Make 2 indentations in top of potatoes and break an egg in each indentation. Cover and cook over low heat until eggs are almost set, about 3 minutes. Sprinkle mixture with meat (cooked bacon or sausage) and cheese (can be grated or sliced cheese laid on top). Cover and cook until eggs are set, 3-5 minutes longer.

We do these differently every time we make them depending upon what's in the fridge at the time.
