Breakfast Crepes

1¼ c flour
2 tbsp sugar
2 tsp baking powder
¾ tsp salt
3 eggs
1½ c milk
2 tbsp oil
margarine (for pan)


Sift together dry ingredients. Combine eggs, milk and oil in separate bowl. Add to dry ingredients and mix until blended.

Melt margarine in large frying pan. When pan is hot, pour some batter into pan. Cook over medium heat until bubbles form on crepe. Turn. Brown both sides.

Spread crepe with filling (e.g., jam, fresh fruit). Roll.
