Pumpkin Bread - Colleen
1 c cooked pumpkin puree, canned
2 large eggs
¾ c real maple syrup
½ c orange juice
¼ c canola oil
2 c flour
1 tbsp ground ginger
1½ tsp ground cinnamon
1 tsp baking soda
½ tsp salt
¼ tsp nutmeg
¼ tsp ground cloves
Spray 9x5 loaf pan with nonstick cooking spray.
Combine pumpkin and eggs in medium bowl and beat until smooth. Add maple syrup, orange juice and oil; mix well to blend. Stir together flour, ginger, cinnamon, baking soda, salt, nutmeg and cloves in a small bowl. Add to pumpkin mix and stir until smooth.
Bake at 350° for 40 minutes; cover with foil and bake another 20 minutes.
